Juniper berries add a crisp, resinous bite that suits the open air, but the cumin lingers in the background and gives the air a faintly sweaty edge that distracts from the clean marine picture.
Clary sage and bay leaf move through the warm air as algae and iris soften the spices with a damp, green coolness.
