Richard Herpin’s Salt & Pepper opens with a furious, three-pronged pepper assault: Sichuan’s citrusy tingle, black pepper’s blunt heat, and pink pepper’s fruity pop. It’s like cracking fresh corns over a hot pan, sharp and almost aggressive. But within minutes, the kitchen settles. Caraway and carrot seeds introduce a dusty, herbal sweetness that’s unexpectedly soft, while bergamot cuts the spice with a cool, almost soapy brightness. The whole thing feels like a black-and-white photograph of a seaside spice market, the pepper grains frozen mid-air, the salt already dissolved into brine.

As it dries, sea notes rise, but they’re not the marine blast you expect. Instead they mingle with olibanum’s clean resin and a whisper of violet-leaf powder.
