Demeter’s Ocean doesn’t pretend to be anything but a photo negative of the real thing. It opens with a sharp slap of sea water, all brine and mineral grit, like the moment a wave breaks over your head and you swallow a mouthful of salt. The sand note comes in quickly, dry and scratchy, pulling the aquatic accords down to earth. There is no ambergris, no kelp, no romantic driftwood; this is the beach stripped of its postcards. The dry down is essentially a slightly warmer version of the opening, because nothing lasts long enough to evolve.
