Macarons by Kyse Perfumes opens with a generous fistful of marzipan, almond paste sticky and dense, then immediately folds in a cherry note that reads more like the syrupy red jewel atop a sundae than anything fresh off the branch. Soon the custard and spun sugar arrive, thickening the composition into something almost edible, a lactonic haze that hovers just above the skin. The heliotrope adds a faint powdery almond blossom dusting, while the myrrh, surprisingly, does not drag it into incense territory but instead lends a subtle resinous warmth that keeps the whole affair from collapsing into straight up dessert. The overall character is a patisserie counter at closing time, when the last macaron sits alone under a glass dome, its sugar shell still glossy but the air around it going quiet.

This is unapologetically sweet and gourmand, leaning synthetic in the best way, like a cleverly constructed candy that knows it isn’t real food.
