Porthole opens with a sharp, briny slap of sea salt and iodine that immediately sets it apart from the usual tropical fruit salads. The pineapple and bergamot are there, but they’re not juicy or sweet straight away; they’re drenched in that mineral, almost metallic salt spray, like biting into a pineapple slice on a windy beach. As it settles, the passionfruit and ginger rise to the surface, warming the salt into something more playful. The white blossoms float through without screaming “white floral bomb,” just enough to soften the edges. And then a caramel note appears, but it’s not sticky or cloying.
