Our take

A small wood-fired bakery sits at the corner of a stone street, the air thick with the scent of caramelized crusts and heated citrus peel. Someone walks past the open door wearing Monarchs, and the fragrance arrives like a warm draft from the oven. Burnt sugar and bergamot lead the way, the sugar dark and brittle, the citrus bright and oil-rich, mixing with the surrounding air without announcing itself from a distance.

Pink pepper adds a fine, dry heat that keeps the sweetness from becoming heavy.
