Sable Sarrasin opens with a bright, slightly bitter citrus mix. Grapefruit and orange provide the juice, while shiso adds a leafy, herbal edge that keeps the fruit from feeling sweet. Pink pepper sits on top with a crisp, tingling heat that announces the spicy direction early. As the fragrance moves forward, black pepper takes over and deepens the impression. Hedione smooths the transition with a clean, airy lift that prevents the spices from becoming heavy or flat. The mineral accord runs through the heart and gives the composition a cool, stony texture that contrasts with the warmth of the pepper. It feels precise rather than cozy, and the aromatic quality stays present throughout.
The base is dry and firmly woody. Vetiver and cedar create a firm foundation with a slightly dusty, earthy character, while oakmoss reinforces the green, mossy tone already hinted at by the shiso. Benzoin adds a faint resinous warmth, but it never turns gourmand or soft. The overall profile stays sharp, mineral, and masculine from start to finish. One limitation is that the hedione and mineral notes can make the base feel a bit thin. The woods and moss are present, but they lack the weight and richness that would make the drydown feel fully rounded.
