Worth knowing

About whipped cream

Nothing in a perfume labelled whipped cream was ever whipped. This note is an accord assembled from synthetic molecules chosen to replicate the creamy, sweet qualities of the food. PerfumeStars says it is not derived from a natural source and is only crafted to suggest one. The smell it gives is a hint of dairy, with no cream anywhere in it.

What it imitates is cream with a high fat content, around 30 to 36% butterfat, whisked until it turns light and holds its shape. Whipped cream is commonly sweetened with white sugar and often flavoured with vanilla, so the perfume version has more to cover than dairy alone.

Lactones are used to recreate the creamy, buttery texture. Gamma-decalactone, one of them, is described by suppliers with words like fatty, creamy, coconut, buttery, vanilla and sweet. Bedoukian lists it for cream and other sweet dairy flavours, and the same molecule is used in gardenia perfumes. Vanillin adds a soft vanilla aroma, while ethyl maltol introduces a sugary, caramel-like sweetness. Ethyl maltol on its own is catalogued as sweet, caramellic, jammy, strawberry and cotton candy.

In a composition, whipped cream is described as a heart note. It adds airy sweetness to gourmand blends of chocolate, caramel and vanilla, and it also appears in floral and fruity ones.

One account dates gourmand fragrances, as they are known today, to Angel, released by Thierry Mugler in 1992.
