About cacao
Cacao comes from the seeds of Theobroma cacao, a tree native to the Amazon rainforest. It was first domesticated about 5,300 years ago in equatorial South America, and the genus name is Greek for "food of the gods". The spelling is a small trap. Strictly, cacao names the plant and the raw bean, while cocoa usually means the processed product, though people swap the two freely. One supplier draws the line the same way, cacao for raw and cocoa for roasted. Worldwide, cocoa bean production reached 5.8 million tonnes in 2024.
Perfumery uses the seeds fermented and roasted. In fermentation the thick pulp liquefies around them. Roasting then steers the aroma, since a low roast gives a more acid, aromatic flavour and a high roast a more intense, bitter one. Cocoa absolute is made by solvent extraction of the roasted, fermented beans. One perfumery glossary counts over 400 volatile compounds in cocoa aroma.
The absolute smells less like a candy bar than the name suggests. That glossary describes it as tobacco, aged leather and something faintly fecal. A CO2 extract goes another way. The Koro Perfumes blog says its sample literally smells of hot melted milk chocolate.
Doses are small. The glossary puts cocoa absolute at 0.1 to 0.5% as the bitter base of a formula. Perfumestars lists vanilla, cinnamon, cardamom, peppermint, tonka, chilli and iris among its common partners. Angel is widely called the first modern gourmand perfume, and it is often listed with a chocolate base note.
